I’ve been a little MIA this past week here – my apologies. I’ve been trying to get my website hosting switched and things are never as easy as you expect them to be! But here I am! I may not have been posting but I have been in the kitchen. And I’ve got some great recipes coming up. But on to today’s recipe. When Fall rolls around, I really love to cook with apples. They pair so well with those Fall spices. So I’ve got some great Apple Cinnamon Muffins to share with you today.
I really love these muffins in the morning with my smoothie. They are low on sweetness and have soft apple chunks baked right in. It’s best to think of these as a savoury muffin and not a sweet muffin. You could always up the honey content in these or even drizzle some over top if you did want a sweeter taste. But I find the apples add a bit of that sweetness as well.
I love how the apple in these muffins keeps them super moist and soft. You can use any type of apple you like – I do find the softer apples bake into the muffin better. They also have coconut oil and honey which keeps them from drying out as well. You should get roughly 10 muffins out of this, depending on how much you fill the muffin tins. I always like to make things more often (especially if it’s an easy recipe) and eat them within a few days. Keeps them fresh and soft!

- 1 apple
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp cinnamon
- 2 tsp vanilla extract
- 1/2 cup virgin organic coconut oil Soften until almost liquid, this will mix better into the batter
- 1/2 cup milk I used almond milk with no changes in flavour
- 1/2 cup honey
Preheat oven to 350°.
Finely dice apple and separate in half.
Combine all ingredients (only half the apple) and mix well.
Pour into greased muffin tins.
Top with remaining diced apple.
Bake for 25 minutes or until toothpick comes out clean.
Let cool completely.
