Chocolate Chip Cookies

Who’s got a sweet tooth out there? This is one recipe you’ll definitely want to pay attention to! These are the best, soft, fluffy, chocolate chip cookies I’ve ever had. With this recipe, I decided to go against the norm – and make these as healthy as I could. And I still stand by these being the best cookies I’ve made. Better than the original full sugar, full butter cookies. Bold statement right? Try these yourself and you’ll see what I’m talking about.

Not to worry for those of you craving a sweet and chocolate-y cookie. You definitely still get that here. I took out all the refined sugar in these and used honey instead. There will still be a small amount of sugar in the chocolate chips themselves – but this is a minor amount in the scheme of things! Especially when you use the semi-sweet chocolate chips. I still found these cookies plenty sweet and they satisfied that sweet tooth craving.

The second way I decided to try and make these chocolate chip cookies healthier was to not use butter. I replaced it with coconut oil. 1 for 1. Very easy substitution. One tip from my experience – heat up your coconut oil so that it’s liquid before adding to your cookie batter. If you don’t, you might get some small chunks of solid oil that won’t mix into your batter well.

The first time I attempted these cookies, I wanted to use a different flour as well. But I haven’t found one yet that works as well as I would hope. I tried with almond flour and coconut flour – but these don’t hold the cookie together well – and while the cookie still tastes great, they completely fall apart and end up very flat. So I stuck with all purpose flour for this recipe.

When baking these cookies – I urge you to use parchment paper on your cookie sheet. It prevents the cookies from getting too brown on the bottom and it really makes a difference! Also be careful not to over bake – I found 11 minutes worked perfectly for me. And these cookies will stay soft so it may look as if they aren’t completely cooked. But they are, trust me!

The healthy version of chocolate chip cookies! They do exist! And they are even better than you'd hope for.

  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 6 tbsp honey
  • 3/4 cup semi-sweet chocolate chips
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 8 tbsp coconut oil (softened)
  1. Preheat oven to 350°.

  2. Soften oil to almost liquid. Beat honey and oil in mixer until creamy. 

  3. Add vanilla and egg. Beat roughly 10-15 seconds.

  4. Add flour, baking soda, and salt. Combine well.

  5. Add in chocolate chips and mix together. 

  6. Use a parchment paper lined baking sheet. Cook for 9-12 minutes. 

  7. Let cool completely.
