Fresh Bruschetta

I’ve been back from Italy for about a week and I already miss all the amazing food I was eating over there. My favourite thing about all of it is how fresh and simple the dishes are. They use less ingredients and let them speak for themselves. No heavy sauces, coatings, etc. I’ve got some great ideas inspired by some Italian dishes and I’ll keep sharing them. For you today – something we ate every day in Italy – fresh bruschetta!

This fresh bruschetta is a great appetizer or side dish. Easy to mix together, it’s bright and fresh and perfect for summer. I added avocado into this bruschetta – I love avocado and it’s a nice creamy addition.

The only part that is a little time consuming in making this dish is cutting up your tomatoes. It’s much better (easier to eat) if they are finely diced which, depending on the amount of people you’re serving, could require a few tomatoes. This works with any type of tomato, but I prefer Roma or Cherry tomatoes. Really bright flavour with these two and a bit less liquid. I did use regular Hot House tomatoes this time – but I scooped out most of the inside/seeds etc so that my bruschetta didn’t end up with too much liquid.

A baguette is preferable for the fresh bruschetta but you can use any bread you like. Toast up some squares of sourdough or any bread of your choice. A nice crispy crostini would taste great too and add a little crunch.

Italy inspired fresh bruschetta that's an awesome summer appetizer. Fresh tomato and avocado pair so well together. 

Ingredients
  • Cherry or Roma tomatoes
  • 1 avocado
  • 1 clove garlic (small)
  • 1/4 tsp oregano or basil
  • 1 tsp extra virgin olive oil
  • 1 1/2 tsp balsamic vinegar
  • 1 baguette
  • pepper to taste
Instructions
  1. Grate garlic into medium sized mixing bowl.

  2. Finely dice tomatoes and avocado and add to bowl.

  3. Add in spices, olive oil, and balsamic vinegar and toss until everything coated.

  4. Thinly slice baguette and lightly toast.

  5. Top with Bruschetta.
