Fresh Tzatziki

I love Tzatziki. I could sit and eat a whole bowl of this stuff in one sitting. It’s Greek yogurt based – so don’t feel guilty if that happens! This Fresh Tzatziki recipe is perfect for summer; it’s cool, creamy and so easy to prepare.

Fresh Tzatziki

I visited Greece years ago and fell in love with Tzatziki. We ate this with pretty much every meal with nice warm pita bread and when I came home I made sure I figured out how to make it. Being Greek yogurt based, it’s a pretty healthy snack¬†or can¬†easily be a condiment on sandwiches, burgers, or wraps. It adds a great creamy texture and huge garlic flavour.

My favourite is to eat this fresh tzatziki with some warmed up pita bread which is more traditional, but you can easily substitute some raw veggies instead. As I also mentioned before, replace mayo with this on your sandwiches or wraps. So good! The cool cucumber really comes through and pairs so well with the dill and garlic. You can use any type of cucumber you like, I use Long English for this recipe because you don’t have to peel it. I’m always looking to simplify things.

Fresh Tzatziki

Everything gets combined in one easy food processor and blended until it’s gorgeous and smooth. This can be easily made ahead of time and chilled in the fridge until you’re ready to serve it. Once ready, drizzle some nice olive oil over top and it’s ready to go.

Summer in a bowl. Fresh, bright, big flavours come through in this fresh tzatziki. Served with warm pita bread - is there anything better?

Ingredients
  • 1/2 cup grated cucumber
  • 1 1/2 tsp dried dill
  • 1 1/2 cups plain Greek yogurt
  • 1 large clove garlic
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white vinegar
  • salt & pepper to taste
  • small wedge of lemon
Instructions
  1. Grate garlic into food processor.

  2. Grate and measure out cucumber and add to processor.

  3. Combine in Greek yogurt, dill, olive oil, and vinegar.

  4. Salt and pepper to taste. Squeeze small wedge of lemon.

  5. Process until smooth.

  6. Chill until ready to serve.

  7. To serve, warm pita bread in oven or toaster. Drizzle olive oil over Tzatziki.

  8. Dip away!
