Summer is finally into full swing here and for me, that generally means less cooking. This healthy Summer Salad that I’ll share today is definitely something we end up eating several times a week. It’s light but still filling, and is very versatile. It can be served as a side dish or as a main with some small additions. I’ll also share my easy homemade Balsamic dressing that pairs perfectly with it.
I’ve gotten away from buying prepared salad dressings from the grocery store. In reality, they are just as easy to prepare at home, and that way you know exactly the ingredients that are getting added. Nothing hidden, nothing you can’t pronounce, and no preservatives! This one I’m sharing today is a favourite at my house. It’s super simple and goes well with almost any salad you put together.
One of the best parts about making this salad as a main dish is the versatility. I usually grill up a couple chicken breasts on the BBQ or in the oven – slice that and add on top. This salad is also fantastic with shrimp or prawns – that’s probably my favourite, but a little more of a treat as it’s more expensive. We’ve also recently experimented with some leftover thinly sliced steak on top – which turned out great!
I love using goat cheese in this salad. It slightly melts with the dressing and creates this beautiful creaminess. Also, adding a handful of croutons delivers a great crunch with each bite.
A couple other tweaks can be a nice change in the salad as well. I’ve previously had some fresh radishes from the garden, slice those thinly and add them in. They add a nice little crunch and peppery flavour. Instead of using an apple or pear, I’ve put in fresh strawberries – another great little change that works so well in summer.

Salads are the way to go on those hot summer evenings when you don't feel much like cooking. Add your favourite veggies and fill up on this!
- 1/2 head romaine lettuce
- 1/2 cup green cabbage
- 1 avocado
- 1/2 apple or pear
- 1/2 cucumber
- handful cherry or grape tomatoes
- 1-2 button mushrooms
- 1 tbsp white or yellow onion
- 1/2 cup goat cheese
- 1/2 cup croutons
- 1 small garlic clove
- 1/2 tsp dijon mustard
- 1/2 tsp worcestershire sauce
- 1 tsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- squeeze of lemon
- pepper to taste
Prepare dressing. Grate garlic into small jar with tight fitting lid. Combine other ingredients. Shake well to mix.
Prepare salad. Chop all ingredients and toss in large bowl.
Dress and serve!
