This past weekend was Canadian Thanksgiving, and what a great time I had! Full of family, friends, and AMAZING food. I was very lucky this year as I was able to enjoy two beautiful turkey dinners. I was definitely spoiled. Everything always tastes so good that I end up eating way too much! It’s nice now to return to my normal eating habits (and my body is thankful for that!). One of my favourite side dishes from Thanksgiving this weekend were the honey mustard brussel sprouts. Steamed and then cooked in bacon with this gorgeous and subtle honey mustard dressing. Yum!
Brussel sprouts have a bad reputation as being gross or bland. But if you add in the right ingredients and cook them properly, they are awesome. They’ve become one of my favourite side dishes at holiday dinners – and we eat them on a much more regular basis now in my house. Brussel Sprouts have so many nutritional benefits – being a great source of fiber and an excellent source of Vitamin C are just a couple.
Cooking Brussel Sprouts properly is pretty simple. First they need to be steamed (here’s a great little steamer/rice cooker) for roughly 15-20 minutes to soften them. I then put them in a skillet with bacon (yum), onion, and garlic. This lets them brown on the outside and absorb some great flavours. And at the end, you drizzle this great dressing over them and top with Parmesan cheese! Doesn’t that sound delicious?
On to the honey mustard brussel sprouts recipe! Add these in as a side dish to your next dinner!
- 15-20 Brussel Sprouts
- 2 slices bacon
- 1/4 cup diced yellow onion
- 1 clove garlic
- 2 tbsp honey
- 2 tbsp dijon mustard
- 1/4 cup shredded parmesan cheese
- salt & pepper
Peel outer layer of brussel sprouts and cut off tough ends.
Put in steamer and steam for 15-20 minutes.
While steaming, warm cast iron skillet on low to medium heat. Drizzle with olive oil.
Add diced yellow onion, diced bacon, and grated garlic. Cook until softened.
Add in brussel sprouts and mix to coat. Cook until browned slightly.
While cooking brussel sprouts; combine honey, mustard, vinegar, salt, and pepper in bowl and whisk together.
Remove brussel sprouts from heat and drizzle with honey mustard dressing.
Top with shredded parmesan cheese.
Ready to serve!
