We love lemons in this house. Lemon desserts, lemon sauces, lemon water etc. There is always a large bag of lemons somewhere. So this dessert was right up our alley. I’ve been making Lemon Squares for years, but this dish has always been one that went hand in hand with sugar. Lemons can be extremely tart if not balanced with some sweetness. I’m so happy with this recipe though, as I’ve managed to create beautiful, gooey, sweet Lemon Squares – with no refined sugar! Success! I can guarantee you won’t miss sugar in these bars. They taste as good as (if not better) than the original sugar crammed squares we all used to make.
Fresh lemons are essential in this recipe. Using that fake flavoured lemon juice just won’t cut it. The fresh lemon gives a bright and tart flavour which is what Lemon Squares are all about. But don’t worry, if you’re household doesn’t regularly stock fresh lemons – this recipe only requires about 2, so it’s easy to grab a couple at the grocery store.
In my history with baking Lemon Squares, I would always garnish the top with some sprinkled powdered sugar. I did that this time as well. – but I really found it unnecessary. These lemon squares are sweetened with honey – I use honey to replace refined white sugar in almost all my baking now. Honey adds another flavour dimension to these recipes. And it is more natural and better for your health. In any recipe you can follow this general rule. 1 cup sugar = 1/2 cup honey. It’s that simple!
Another thing I’ve decided in most of my cooking now is to also replace butter with coconut oil. Butter in small amounts is not going to be harmful to you – it is still always better to use the real thing rather than margarine. But, if you do want a healthy alternative – try replacing it with coconut oil. 1:1 ratio when substituting and I find the subtle coconut flavour a very nice addition.
When making the filling for this recipe – it is very thin. Don’t worry about that. Once it bakes in the oven, it will thicken up beautifully and become gooey and soft. These smooth lemon squares are a scrumptious treat with bright lemon flavour and a crumbly crust.
- 1 1/2 cups all-purpose flour
- 1/4 cup honey
- 3/4 cup organic virgin coconut oil
- 1/2 cup honey
- 2 tbsp. all-purpose flour
- 1/8 tsp salt
- 1/2 cup fresh squeezed lemon juice
- 2 tbsp. lemon zest
- 2 eggs
Preheat oven to 350°. Lightly grease a square baking dish.
Combine crust ingredients in mixer first. Then press into bottom of square (8x8) baking dish.
Bake crust for 18-20 minutes.
While crust is baking, prepare filling. Combine all filling ingredients in mixer. Whisk until well combined and frothy.
When crust is finished, pour filling over top.
Back into the oven for 20-25 minutes.
Let cool completely before cutting and serving.
