Spiced Ginger Cookies

The holiday baking ideas have started to swirl. Christmas will be here before you know it, so I’d best have my thoughts in order! These Spiced Ginger Cookies are a long-time favourite around this time of year. I’ve been making them for years – although these will have a healthier twist. I love that these spiced ginger cookies are filled with amazing and fragrant spices like cinnamon, cloves, and of course ginger! They stay soft and moist after baking and are just plain perfect!

Spiced Ginger Cookies

Sometimes I love just a simple cookie but still want flavour. This is the perfect cookie for that. Very few ingredients and very few steps. They pack a ton of flavour into a little cookie and only take about 10 minutes (or less) to whip together.

When I was originally making these cookies in previous years – I used shortening. I switched that out for coconut oil (as I’ve been doing in most of my recipes) and it worked beautifully. It keeps the cookies moist which is important.

These spiced ginger cookies also have plenty of sweetness in them. Both honey and molasses keep the cookies sweet enough for the holidays without overdoing it.

These soft cookies are a holiday favourite around here and will become one at your house too! 

Servings: 12 cookies
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp ginger
  • 1/4 tsp salt
  • 3/4 cup coconut oil
  • 1/4 cup honey
  • 1 egg
  • 1/4 cup molasses
  1. Preheat oven to 325°.

  2. In mixer – combine all ingredients.

  3. Line baking sheet with parchment paper. Portion your cookies.

  4. Bake 10-12 minutes or until toothpick comes out clean.

  5. Let cool.

  3. What method did you use for placing the cookies on the sheet? Did you roll the cookies into balls? Did you flatten them?

    I wonder what’s best?

      I have done both methods actually. I found that rolling them into balls and leaving them like that took slightly longer to cook (maybe 2-3 minutes) but because of this the outside was a little harder.

      I prefer to roll into balls then flatten slightly with a fork or even just your fingers. This way they cook in less time and stay really nice and soft (even the outside).

    • Hello Michelle.

      My trick is when preparing the cookies – I roll the cookie into a ball and place onto the baking sheet. Then I just lightly flatten the ball – leaving it roughly an inch or so thick. You don’t want to flatten too much otherwise you’ll get very thin (and harder) cookies!
