Today I’m going to share a great recipe for oven baked cod fillets with goat cheese filling. An easy to prepare recipe that delivers a gourmet tasting dish. The panko breading crisps up beautifully in the oven providing a nice crunch on the fish, and the goat cheese filling just oozes out as you bite into it keeping everything very moist.
This recipe can really be carried over to any white fish. Halibut and Sole are some other great options that this would work well with. When buying the fish, you want to choose fillets that are a bit thicker (1 inch +). This allows you to cut a small pocket into the side where the goat cheese filling will go. It’s much better to do the pocket on the side rather than the top of the fish as you want to be able to flip it halfway through the cooking time which will allow both sides to brown and crisp up. Some of the filling might still ooze out, but I find that you don’t lose too much as the breading helps keep everything together.
Because this is baked in the oven, try to find a good oven safe dish to cook in. I use a cast iron skillet – these things are amazing! They provide a very even heat and are so easy to clean after. They transfer easily from stove top to oven as well – I cook almost everything in these.
I found this recipe to be very light even with the breading and filling. A great fit for summer and warmer weather as you don’t feel heavy after eating it.
Cod Fillets With Goat Cheese Filling
- 3 fillets cod
- 1 egg
- 1 cup panko
- 1/2 cup goat cheese
- 1-2 green onions
- 1 clove garlic
- Preheat oven to 425°.
Goat Cheese Filling
- Finely dice garlic and green onion (1 or 2 - depends how much you enjoy green onion. I used 1 in my recipe last night, but thought it could use more). Add to small mixing bowl.
- Add in 1/2 cup goat cheese and mix together thoroughly.
- Crack egg into shallow bowl and beat until smooth. You can add a splash of milk if you want to dilute the egg a little bit.
- Pour roughly 1 cup of panko into a separate shallow bowl. Add pepper to taste and mix into the breading.
- Cut a shallow pocket into the side of each fillet - make sure you don't cut all the way through.
- Stuff 1/3 of goat cheese mixture into each piece of fish.
- Gently dip each fillet into egg and then into breading - coating all sides.
- Place into cast iron skillet.
- Drizzle oil around the entire skillet (I used avocado oil - use one that has a higher heat level as it won't burn. Grapeseed oil works as well).
- Pop into the oven for a total cook time of 20-25 minutes. Check halfway through and flip the fillets over to get an even cooking.
This would go really well served with a salad or some nice roasted asparagus! Let me know what you think!
