Lemon Butter Cod

Health is a journey. While I promote a plant based lifestyle now – these older posts reflect my journey into making healthier choices. I leave these online to support others in making changes and to show that not everything needs to change at once. Take your time and always listen to what’s right for your body.

I’ve been thinking about this one dinner we had while we were in Positano, Italy in June. At a restaurant called Il Fornillo, nestled up high on the hill with the most incredible panoramic view of the ocean. This area in Italy is famous for its lemons; hence why half the table ended up ordering this special of the day and almost licked the plate afterwards! The special was a freshly caught white fish drenched in this lemon and orange creamy sauce. To die for. I’ve been thinking about trying to recreate this dish ever since. This Lemon Butter Cod that I’m sharing today is a little bit lighter with no heavy cream and it boasts a big lemon flavour.

Lemon Butter Cod

This is a dish that can be done with any firm white fish so feel free to substitute what you find fresh at your grocery store or local market. This is a great summer dinner, as fish is always so nice and light. To take advantage of the beautiful summer weather we’ve been having here, we cooked the fish outside on the BBQ. The sauce takes only a few moments inside so this dish comes together in about 20 minutes – whenever the fish is cooked. If you aren’t interested in the BBQ, the fish can be cooked in the oven as well. The sauce is drizzled over top while plating, so how you cook the fish is very flexible.

Lemon Butter Cod

I’ll definitely be making this lemon butter cod again as it was super easy to pull together. I think next time I’ll try adding a little cream to get a thicker sauce. Also would love to try adding in some fresh orange flavour to be more similar to the dish I had in Italy.
