I’ve got a great little appy coming your way today. Minimal ingredients and it’s super easy and quick to prepare. I had family visiting this past weekend so I made these Smoked Salmon Roll Ups and they were a big hit – they disappeared really fast! A nice light cream cheese with some chopped green onion mixed right in give this a nice soft texture and combines perfectly with the delicious smoked salmon.
Smoked salmon can be easily overpowered so I didn’t want to add too many different ingredients. A simple light cream cheese mixed with some freshly chopped green onion, and sprinkled with a finely chopped dill pickle or capers is the perfect combination.
These are just perfect for summertime. The weather is getting warmer, and the foods I crave tend to become much lighter and fresher. These take only about 5 minutes to whip together which is another bonus – more time outside! They are also great no matter how many people you want to share with. One tortilla will yield roughly 8 small rolls depending on the size you cut them. Super simple to just roll together another for bigger groups. Also, the number of rolls you get will differ depending on the size of tortilla you use. Mine were the 10” tortillas, which yielded about 8- 1 inch rolls.
I unfortunately didn’t have any capers at the house so I used instead a finely chopped dill pickle. Just something to add that tang and saltiness that the smoked salmon pairs so great with. I’d also love to try this recipe out again but instead wrapping in a very thinly sliced piece of cucumber – you would need a mandolin. I think this would make them even fresher and would taste awesome – and for those of you wanting to cut carbs, it would be perfect. I’ll try them out next time and share!
This is a short and sweet recipe today! I’ve been busy preparing for a vacation to Italy and I leave in a couple days. So things will be pretty quiet around here for a couple weeks. But I’m so excited for all the amazing food and wine to try over there. And I’ll be able to come back and share some Italian inspired dishes with you!
Smoked Salmon Roll Ups
- 3 10" tortillas
- smoked salmon
- 1 cup dill pickle (diced) or capers
- 2 green onions
- 1/2 cup light cream cheese
- Finely chop green onion and mix together with cream cheese.
- Spread cream cheese mixture thinly onto tortilla.
- Place one layer of smoked salmon across whole tortilla.
- Top with diced pickle or capers.
- Starting at one end, roll tightly together.
- Slice into 1 inch rolls and place onto your serving dish.
