Vegan Caesar Salad Recipe

The Vegan Caesar Salad. A beautiful thing for a caesar salad fiend like myself. I have an old recipe on this blog (you can find it here) but when I became vegan, I had to switch things up. This one is easy to make, delicious and just like a regular caesar salad; you can’t even tell it’s vegan. 😉

8 ingredients. 1 Nutribullet. Bam.

Vegan caesar dressing. It’s creamy, tangy and deliciously garlicky. Just like a caesar salad is supposed to be, right? I was so happy when I had success with this dressing, I seriously missed my caesar salads. They have always been a favourite of mine.

You can easily buy croutons from your grocery store, just make sure to read the ingredients list! There doesn’t need to be any added sugar or anything other than the basics.

Personally, I think it’s better with homemade croutons. I prefer knowing exactly what goes into my food, and the only way to 100% know that, is to make it myself.

Don’t worry, these croutons aren’t very hard to make. Simply cube a few slices of your favourite bread, toss in a tbsp or 2 of olive oil, a sprinkle of garlic powder, oregano, salt and pepper and bake in a 350° oven for 15-20 minutes. Voila! If you want a really lazy version of this – toss your bread into the toaster with the olive oil and spices, then cube up the toast.

Now back to this Vegan Caesar Salad. Whip up your dressing first. Chop up some beautiful, fresh romaine lettuce. Drizzle that glorious dressing, and toss in your croutons. Done.

Serve this salad as a side to whatever dish you like, it pairs really well with pasta!

Vegan Caesar Salad Recipe

Dig in to this Vegan Caesar Salad with a creamy, tangy and delicious homemade dressing! 

Prep Time 20 minutes

Ingredients

Dressing

  • 1 cup cashews
  • 1 tsp dijon mustard
  • 3 cloves garlic
  • 1/2 cup capers
  • 3 tbsp caper brine
  • 1 lemon juiced
  • 3 tbsp olive oil
  • salt and pepper

Salad

  • 2 heads romaine lettuce chopped
  • homemade or store bought croutons

Instructions

  1. Combine all dressing ingredients in a high powered blender or Nutribullet.

  2. Blend until smooth. Adjust seasoning if necessary.

  3. Chop romaine lettuce and add to a large bowl.

  4. Add croutons.

  5. Drizzle with dressing and toss to combine.
