Healthy Blueberry Muffins

These muffins have no refined sugar and are perfect for a grab and go breakfast.

Ingredients

  • 2 eggs
  • 1/4 cup honey
  • 1 cup milk
  • 1/2 cup olive oil
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 3 tsp baking powder
  • 1 1/2 cups blueberries
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 375° and lightly grease muffin tins with cooking spray.

  2. In large bowl whisk together eggs and honey.

  3. Mix in milk, olive oil and vanilla.

  4. In separate bowl; combine flour, baking powder and salt.

  5. Sift dry ingredients into wet gradually. Stirring to combine after each addition.

  6. Fold in blueberries.

  7. Pour into muffin tins.

  8. Bake 30 minutes.
